The Midwest/Chicago region recently came together for a much-anticipated gathering of members. USJC Associate Eric Hattori (ELP ’18) provided delicious Asian fusion cuisine from his food truck Piko Street Kitchen and treated everyone to spam musubi. His food truck travels to Chicago and the suburbs, and Mr. Hattori also caters for private events. The event was a great opportunity for members to support a local Japanese American restaurateur during this difficult pandemic, which has severely impacted business for restaurants and the food service industry.
